Bread-less Breakfast Sandwich
This sandwich needs no introduction. Eggs, meat, melted cheese. No bread. No guilt.

The "bread" is two scrambled eggs, shaped into nice little English-muffin-like circles, you warm the ham, or bacon, or sausage (or skip meat all together) lay a slice of cheese over egg after it's flipped and enjoy a nice low-carb breakfast option. The variety of sandwich options is pretty much endless.

Ham and cheese
Cheese and veggies
Huevos rancheros
Mozzarella, tomato and basil

You can sprinkle in some diced up veggies into the egg while it cooks. This method of a "scrambled" egg circle is also great for tossing onto an English muffin or bagel, if you want the carbs. Who doesn't want the carbs? Wrap your bread-less egg sandwich in parchment paper for a make ahead breakfast and toss it in the microwave for 30 seconds!
What you need:
2 eggs, whisked in a bowl with a sprinkle of salt and pepper (think scrambled eggs)
bacon, ham or breakfast sausage
cheese of choice, make sure it's sliced not shredded
diced veggies to sprinkle into the egg or a sliced veggie to layer inside
an egg circle, or a ball jar lid
cooking spray
a good non-stick pan
How to make it:
Spray the pan with cooking spray and heat on MEDIUM
Whisk two eggs in a bowl, sprinkle with salt and pepper, whisk again
Place the egg circle or jar lid in the center of the pan, pour half of the egg mixture in and let it cook until the sides are done and the middle is beginning to firm up
Note: if you hold the egg circle or jar in place you can use a spatula corner or spoon to move the egg around inside the circle for a more even cook, make sure you hold the circle in place or the egg will leak out
Remove the egg circle and flip, or flip the jar cap and egg with a spatula and pull the lid off the egg
Cook through and set aside, repeat for the other egg
If your meat or veggies are cold, heat them in the pan alongside the egg circle
Once you flip the second egg over the finish cooking, layer a slice of cheese and let it melt
Stack the two egg halves together and enjoy your low-carb breakfast!
