Cool Ranch Dorito Crunch Wrap Supreme

Once upon a time over the initial quarantine period of 2020 Matt and I had this idea to combine the idea of a crunch wrap supreme from Taco Bell with their Doritos locos tacos and create my big favorite the Doritos Nacho Cheese Crunch Wrap Supreme. We loved it hard, but I always had this lingering need to create this with Cool Ranch Doritos, and I knew it was going to take some serious tweaks in my recipe.

Cool ranch needs white queso, not the cheez-whiz style yellow cheese dip that you use in a regular crunch wrap, and works really well with the nacho cheese Doritos. I played and played with queso blanco dips, some were okay some sucked and then I finally found the perfect combination for this recipe and anytime queso dips to be consumed on the couch, out of the container at 10:30 pm.

The style is exactly the same as a regular crunch wrap and my Dorito version. Seasoned ground beef, a tortilla, some heated melty cheese, some shredded cheese, sour cream, lettuce, tomato, and something crunchy (Doritos)

Queso Recipe:

1 cup whole milk

1 cup half 'n half

bring it to a very slow simmer on low

once you reach that simmering point

14 slices of white American cheese, folded and broken into little squares

& 7 oz of shredded Monterey Jack cheese

2 TSP chili powder

1 TSP nutmet

2 TBSP chopped jalapeños

1 TSP red pepper flakes

salt + pepper to taste

whisk this until completely blended, let it come to another low simmer

a final stir and remove from heat, cool to almost room temp for a crunch wrap

2 minute rest to eat right away.

To build the wrap:

pre-make queso 30 minutes before using for the crunch wrap

2 TBSP taco seasoning

1 lb ground beef

a handful of: shredded lettuce

diced tomato

shredded cheddar jack/cheese

a dollop of: sour cream

white queso

a burrito sized tortilla

3-4 Cool Ranch Doritos

  1. use a case iron skillet or a greased frying pan to cook the ground beef

  2. season the ground beef 1 TBSP taco seasoning, cook until just about done, add a TBSP of water, then follow up with the rest of the taco seasoning

  3. stir and remove from heat

  4. microwave the tortillas 15 seconds before assembling

  5. assemble tortilla first, a dollar of white queso, a handful (or large spoonful) of seasoned ground beef, 3 Doritos turned inward to create almost a circle of chips, a dollop of sour cream, lettuce, diced tomatoes, and finish with a handful of shredded cheese

  6. fold your tortilla bottom up, then each corner inward toward the center until your creation is pentagon shaped

  7. heat a skillet on medium and cook each side (even the edges) until a golden brown

  8. serve immediately, and enjoy!
