Lightened Up Chicken Cordon Bleu

Something strange about me, I am allergic to bleu cheese. It's the mold, it's an odd allergy, but the first time I was afforded this meal I was like can I have this?

Turns out obviously chicken cordon bleu has nothing to do with bleu cheese, or mold. Apparently chicken cordon bleu is not even a French dish, it's from Switzerland and technically should be called something along the lines of schnitzel. I once had a stuffed mushroom with bleu cheese in it, so I guess you can't be too careful.

Chicken cordon bleu is a huge favorite of mine and Matt's and we eat it all the time, but obviously it's not top of the list in the healthy eating lifestyle. Untillllllll today. I researched, I planned and I figured out how to make this better fitted for Noom, and low carb. As far as the breading goes, there is really no way to make it completely "green" or keto so here is what you do. For keto, replace the bread crumbs with almond flour, and sear the chicken roll in olive oil. This technique of breading I got from orange chicken, that recipe calls for an egg wash and flour, but no breading. You use that method and it stays into the low carb/no carb style.

To make this a Noom friendly meal, the best you can do for breading is whole wheat bread crumbs. 4C makes them and they are fantastic. Applegate ham, reduced fat Swiss cheese and egg whites. We bake it instead of frying and then you can still have the hollandaise sauce!

What you need:

4C whole wheat bread crumbs

Applegate Black Forest uncured ham

reduced fat Swiss cheese

egg whites

thin chicken breast cutlets

baking sheet

parchment paper

cooking spray

Knorr hollandaise sauce mix

smart balance (or any light margarine)

What to do:

  1. Preheat oven to 400 degrees

  2. Prepare all of your ingredients for easy reach

  3. Season your bread crumbs with Italian seasoning, garlic powder, onion powder, salt and pepper

  4. Season your egg whites with salt and pepper

  5. Place the chicken slice flat, layer a slice of ham then a slice of swiss

  6. Roll the chicken up, and secure with tooth picks

  7. Dip the chicken into the egg whites

  8. Roll into the bread crumbs

  9. Layer the parchment paper into the cooking sheet

  10. Spray a thin layer of cooking spray

  11. Place the breaded chicken rolls onto the sheet and cook for 15-20 minutes, until the internal temp reaches 165 degrees

  12. While the chicken cooks, make the hollandaise sauce, follow all the instructions but use the margarine, it keeps it lower in fat and calories

  13. Serve with your choice of veggie and potato

  14. Enjoy!
